材料
"沙拉油 适量","香菇 3朵","葱 2根","辣椒 1根","蒜头 4瓣","花椒 5克","绞肉 100克","米酒 适量","鸿喜菇 50克","雪白菇 50克","泡香菇水 100克","金针菇 1包","魔芋丝 1包","宽粉 1球","酱油 适量","盐 适量","香油 适量","黑胡椒 适量","糯米粉 15克","酱油 适量","香油 适量","黑胡椒 适量","米酒 适量",
做法

1:绞肉用【醃肉调味料】组醃制30分钟、花椒洗净、大蒜洗净去皮切丁、葱洗净切段、香菇洗净泡开切丁,鸿喜菇、雪白菇、金针菇洗净去尾,切半备用

2:不放油,热锅同时顺手将香菇丢入烘乾,等水分蒸发后拿出(这会大幅度增加香菇的香气)

3:放入沙拉油,加入蒜、葱白、辣椒、香菇、花椒炒香

4:加入绞肉、米酒,炒至表面白色

5:加入鸿喜菇、美白菇、金针菇、略为拌炒,加入泡香菇水,大火煮开

6:加入洗净的宽粉、蒟蒻丝,继续煮软

7:加入香油、酱油、米酒、黑胡椒调味,再加入葱青色的部分*,用糯米粉水勾芡*

8:起锅享用
