酒香鲜虾粉丝
材料
"葱段 50g","红萝卜 20g","蒜头 3瓣","洋葱1颗 约230g","虾10只 约200g","冬粉 2把","蛋 1颗","油 2大匙","米酒(或绍兴酒) 2大匙","酱油膏 2大匙","盐 1匙","水 一米杯"
做法

1: 粉丝两把泡水至软化备用⋯

2: 鸡蛋一颗打散,洋葱红萝卜切丝⋯

3: 葱切段、蒜头切末⋯⋯

4: 鲜虾从中间剪开去肠泥⋯

5: 锅热加油,先将打散的蛋炒熟⋯⋯

6: 炒熟的蛋播到锅子旁边,将虾子下锅两面煎红⋯不必煎熟(两面虾壳煎红后先取出)

7: 取出虾后,中小火放入蒜末炒香⋯(火不要太大,因为刚刚煎过虾的锅子有残留虾膏容易烧焦)

8: 加入红萝卜丝、洋葱丝、半匙盐炒香炒软⋯

9: 洋葱稍软后加入葱段⋯

10: 加入两大匙绍兴酒(或米酒)、两大匙酱油膏、一米杯水⋯炒至水滚⋯

11: 放入冬粉煮至冬粉软透⋯⋯

12: 冬粉煮软后移到砂锅⋯再将刚刚煎半熟的虾子摆在冬粉上,盖上锅盖小火滚1分钟即可。(火勿太大,避免底部冬粉烧焦)
