紫米虾仁珍珠丸
材料
"螃蟹 2只","姜片 2片","葱 1支","枸杞 1大匙","红枣 8颗","盐 1小匙","花雕酒 2大匙","白胡椒 少许","鸡肉 半只","姜片 4片","水 1000cc","各种菇类 随意","盐 2小匙","香菜 1株","紫米 1碗","绞肉 300g","大虾仁 8只","荸荠 4颗","姜末 1茶匙","米酒 1大匙","酱油 2大匙","胡椒 适量","鸡粉 一小匙","枸杞 装饰用",
做法

1:准备好鸡汤材料

2:将川烫好的鸡肉,各种菇类和姜片放入适当大小的锅子里

3:倒入约1000cc的水,放入电锅中,外锅加2杯水炖煮

4:这段时间就来准备珍珠丸

5:紫米已经先泡水4小时以上

6:将绞肉加入荸荠丁和所有调味料往同方向搅拌至有黏性,取适量的肉泥包入整只虾仁

7:均匀裹上预先泡过水的紫米备用

8:准备花雕蟹的食材,将螃蟹去鳃洗净后,放入葱,姜,枸杞,红枣,倒入花雕酒,洒上盐巴和黑胡椒备用

9:鸡汤炖煮完成后取出,加入盐巴调味,放些香菜即可

10:电锅里放上蒸架,加入1.5杯水,珍珠丸连盘子一起放入锅中

11:花雕蟹放入蒸层,和珍珠丸一起炖煮20分钟

12:花雕蟹蒸好后即可取出

13:蒸珠丸蒸熟后用泡过热水的枸杞装饰
