豆豉鲜蚵
材料
"鲜蚵 300g","嫩豆腐 1盒","豆豉 30g","葱 半根","姜 少许","蒜 三瓣","辣椒 1根","【醃料】米酒 1小匙","【醃料】盐 少许","【醃料】太白粉 1小匙","【调味料】酱油膏 1.5大匙","【调味料】糖 1/2小匙","【调味料】白胡椒粉 1/4小匙","【调味料】盐 酌量"
做法

1: 准备材料

2: 蚵以清水漂洗数次后沥乾,以【醃料】拌匀,水滚先过水汆烫几秒(不用滚)捞出,豆腐切2~3公分块也过水汆烫捞出沥干

4: 豆豉洗净挤干水份以1小匙米酒浸泡,葱切花、姜蒜辣椒切末

5: 锅热放1大匙油先炒香豆豉(挤干再入锅)

6: 再放姜蒜辣椒末炒到飘出香味来

7: 放入豆腐轻轻拌炒一下加入【调味料】和泡豆豉的米酒,拌炒到豆腐上色

8: 倒入鲜蚵加1大匙(15cc)开水略煨煮一下就完成了

9: 装盘后洒上一点葱花
