奇异果派
材料
"中筋面粉 120g","发酵奶油 50g","糖粉 5g","全蛋 15g","果醋 2~3c.c","水 10c.c","盐 1g以内","绿色奇异果 2颗","砂糖(奇异果酸度斟酌) 20g-30g","莱姆酒 一大匙","水 20c.c","无盐奶油 10g","盐 少许"
做法

1:奶油(无需放软)、面粉、糖粉切拌成粉粒状,加入蛋、果醋、盐水(盐直接入水帮助溶解),用压的方式将粉粒与水性材料混合均匀成团状,包好后放入冷藏松弛30min

2:奇异果切块,加入砂糖、水、奶油、莱姆酒、少许盐,煮到水分收干浓稠状,放凉备用

3:派皮分割成约60g与30g各两团,60g铺底戳洞(4寸模)

4:填入奇异果馅料

5:派盖30g杆圆并且戳洞铺上后用手压派边黏着

6:刷上蛋液,烤箱预热,上火200下火200,置于中层烤10分钟后转向再烤10-15min,总时程约20-25min,出炉放凉脱模即完成
