避风塘素腐皮卷
材料
"腐皮 1片","甘笋 1条","冬菇 5只","木耳 6片","韭黄 1束","葱 1棵","蒜头 1个","指天椒(鲜) 2只","指天椒(干) 2只","豆豉 1小匙","生粉 1小匙","水 50ml","七味粉 1小匙","盐(炒料用) 半小匙","盐(回镬用) 半小匙",
做法

1:蒜头去皮切碎备用

2:炸锅中下油,木筷子插入起泡后,下蒜蓉炸至金黄,捞起备用

3:甘笋去皮刨丝冬菇、木耳榨干水后切丝韭黄洗净后切小段

4:先用甘笋丝、冬菇丝、木耳丝、韭黄加半小匙盐炒熟,待凉备用

5:生粉加水同小火煮成糊,待凉备用

6:腐皮先剪走周边硬皮,用剪刀一开十六

7:尖位向上,将素菜料放中间,包起后在尖位涂一点生粉糊沾口

8:将炸锅中的油再次烧热,逐件腐皮起下油,炸至起泡泡及金黄色后,捞起备用

9:葱洗净切去根部后切粒指天椒洗净去蒂后切粒

10:另开一锅,下一点点油,先爆香豆豉,有香味后下葱粒、指天椒粒爆香

11:下炸蒜、腐皮卷,最后七味粉及半小匙盐炒匀即可
