花雕鸡
材料
"鸡腿肉 1只","姜 1块","蒜头 6粒","花雕酒 1碗","酱油 1大匙","麻油 1大匙","蚝油 1大匙","辣豆瓣 1大匙","干辣椒 5~6根","花椒 1小匙","蒜苗 1根","芹菜 2根","高丽菜 1/4颗","豆腐 适量","香菇 适量","海鲜 适量","火锅料 适量","昆布高汤 1400cc",
做法

1:鸡肉以一大匙花雕酒、酱油醃10分钟

2:炒锅中加入一大匙麻油,冷锅冷油放入姜片煸香后,放入鸡腿肉,鸡皮面朝下以小火慢煎至表皮焦香,加入蒜片

3:加入辣豆瓣、花椒、宫保(干辣椒)、剩下的花雕酒、蠔油,盖上锅盖闷煮,待汁收干

4:将鸡肉移至砂锅,加入蒜苗、芹菜稍微拌炒即可

5:鸡肉吃完后,排入火锅料,加入昆布洋葱高汤

6:煮好的火锅
