花雕鸡

材料

"鸡肉 900g","老姜片 50g","沙拉油 2大匙","麻油 2大匙","金针菇 1把","芹菜 150g","葱绿 1根","胡椒 适量","绍兴酒 40cc","酱油 40cc","蚝油 1大匙","蛋黄 1颗","酱油 60cc","绍兴酒 200cc","蒜头 4瓣","洋葱 1颗","红辣椒 2根","葱白 1根",

做法

  1. step1

    1:鸡肉带骨切块, 加入醃料醃20分; 芹菜、青葱切段; 洋葱切丝; 金针菇去除底部拨散

  2. step2

    2:取一炒锅, 放入沙拉油、麻油、姜片小火煸出香气

  3. step3

    3:摆入鸡肉(鸡皮朝下),盖上锅盖闷煎至由红转白(约莫5分钟)

  4. step4

    4:待底部金黄翻面

    5:下酱汁材料, 盖上锅盖续闷15分

    6:将料翻匀

  7. step7

    7:铺上金针菇、芹菜、葱绿续闷5分钟

    8:翻匀, 起锅前洒上胡椒粉更增添香气
