椰香咖哩海鲜粉丝煲
材料
"洋葱 半颗","大蒜 2瓣","白酒或米酒 2大匙","虾仁 12只","鱼片 200g","蛤蜊 30颗","冬粉 250g","红萝卜 适量","甜豆 适量","小番茄 适量","椰奶 200ml","香菜末 适量","原味咖哩块 4块","香茅 1支","柠檬叶 4片","香菜梗 1把","水 1000ml",
做法

1:冬粉泡水软化备用

2:牛头牌原味高汤块加水1000ml,与香茅,柠檬叶及香菜梗煮成高汤备用

3:洋葱切丝,大蒜拍碎,红萝卜切片,甜豆及小番茄对切备用

4:鱼片擦干,表面拍上少许面粉

5:热锅加适量油,将鱼片煎至表面金黄后盛起备用

6:热锅加适量油,下洋葱丝与红萝卜片,待洋葱丝变软后续加大蒜炒至香味飘出

7:加入虾仁拌炒,倒入白酒炒至酒精蒸发后,先将虾仁取出

8:倒入高汤,先加蛤蜊约煮5分钟后,加入冬粉及蔬菜

9:待蛤蜊全开后加入虾仁,鱼片及椰奶再煮2分钟即可

10:起锅前撒些香菜末,香浓的椰香咖哩就完成了!
