麻油海鲜姜黄饭
材料
"白米 3杯","水(米水) 3杯","福寿纯芝麻油 3大匙","姜末 1大匙","蒜末 1大匙","洋葱末 150g","姜黄粉 2大匙","虾 8只","蛤蛎 10~12个","小番茄 10颗","香菜末 1小把","盐 适量","粗粒黑胡椒 适量","米酒 1小匙","盐 1小撮","太白粉 1/4小匙","胡椒 少许",
做法

1:准备好所有食材,白米洗净后泡水约半小时后沥干水分备用,浸泡的米水预留3杯分,虾子剥除虾头、虾壳去除肠泥,虾头留着备用,虾仁以[醃料]抓醃备用,小番茄切对半,洋葱切细丁,姜、蒜切细末

2:铸铁锅倒入麻油、放入蒜末、姜末、洋葱丁以小火慢煸香慢炒(麻油不耐高温,务必以小火慢煮,才不会有苦味喔)

3:放入虾头,继续以小火慢炒至虾头微微变红,取出虾头备用

4:倒入白米、姜黄粉拌炒均匀

5:倒入步骤1预留的米水,放入小番茄、虾头,盖上锅盖,以中火煮滚至锅盖边缘微微冒烟

6:改以米粒般小火煮约8分钟

7:掀盖,放入虾仁、蛤蛎均匀摆放

8:盖回锅盖以中小火续煮5分钟后关火,焖约10-15分钟至蛤蛎全部打开

9:掀盖后以盐、粗粒黑胡椒稍加调味,撒入香菜末,搅拌均匀让水气蒸发即完成
