鲑鱼卵干贝蒸饭
材料
"生食干贝 6颗","吻仔鱼 适量","干燥香菇 6朵","白米 1杯半","大蒜 1瓣","姜片 3片","红萝卜 1小根","酱油 3大匙","米酒 1大匙","鲑鱼卵 适量","鱼肉 适量","蔬菜油 1大匙","水 适量","酱汁:酱油 50ml","酱汁:味碄 25ml","酱汁:糖 10g","洋葱丝 半颗",
做法

1:干燥香菇泡软(泡香菇水留下)切细丝,大蒜切末,红萝卜刨成细丝,白米洗净沥干

2:一半干贝剥成丝备用

3:鱼肉切成小丁,倒入少许米酒(食材外)拌一下

4:热锅加入蔬菜油爆香姜片,蒜末后加入吻仔鱼炒香,续加香菇丝、红萝卜丝及白米拌炒

5:将炒好的米移至电锅内锅,加入1杯半的香菇水(不足的部分以水代替)、酱油、米酒拌匀,外锅放水一杯开始蒸饭。待电锅开关跳起后,把鱼肉丁,干贝丝舖于饭上,外锅再次放水半杯,蒸至饭熟透即可

6:将酱汁所有材料放小锅,煮至浓稠即可熄火

7:剩余干贝以火枪将表面炙烧至上色即可

8:最后将饭盛入碗内

9:摆上干贝与鲑鱼卵,淋上酱汁就完成了!
