红烧龙趸头腩

材料

"500克龙趸头腩","1包硬豆腐","3瓣蒜头,刴碎","20克姜,切片","20克葱","20克红辣椒,切半","龙趸头腩腌料","20克粟粉","1汤匙绍兴酒","1/2茶匙盐","1/4茶匙白胡椒","酱汁材料","100毫升清鸡汤","2汤匙蚝油","2汤匙豉油","1茶匙粟粉","1/4茶匙盐","1/4茶匙糖","1/4茶匙胡椒粉 "

做法

  1. step1

    1:把姜切片

    2:蒜头去衣

    3:把鱼腩切成适中大小,加入盐,胡椒粉及绍兴酒腌15分钟

    4:把豆腐切成约1/2吋厚件

    5:煎豆腐至每边呈金黄色,放在一旁备用

    6:鱼腩蘸满粟粉

    7:鱼腩蘸满粟粉,落油,轻轻煎鱼腩约2分钟至呈金黄色,加入姜片及蒜粒煮香

    8:加入清鸡汤及蚝油拌匀

    9:豆腐回锅,并把鱼腩煮至熟透,酱汁收干

    10:加入盐,糖,白胡椒粉及豉油调味

    11:最后加入葱及红辣椒炒匀
