宫保鸡丁

材料

"去骨去皮鸡胸肉 1块","蒜仁 3颗","葱 1支","辣椒(干湿皆可) 适量","「醃料」玉米粉 1大匙","「醃料」鸡蛋 1/4颗","「醃料」酱油 2大匙","蒜味花生 适量","米酒 1大匙","白醋 1茶匙","香油 约1.5大匙","沙拉油1 约1.5大匙","沙拉油2 约1杯","花椒粒 1.5大匙","「酱汁」水 2大匙","「酱汁」酱油 1.5大匙","「酱汁」番茄酱 1茶匙","「酱汁」糖 1茶匙","「酱汁」玉米粉 1.5茶匙","「酱汁」盐 0.5茶匙"

做法

  1. step1

    1: 葱切段、蒜拍碎、辣椒剪小段去籽、酱汁拌匀备用

  2. step2

    2: 鸡胸肉断筋切小丁,加入醃料抓醃

    3: 起锅热香油+沙拉油1(各半)爆香花椒粒,滤出备用

  4. step4

    4: 起锅150度油锅(沙拉油2),将鸡丁过油至变色约5分熟,捞起备用 起锅热花椒油,爆香葱段、蒜末,放入辣椒、鸡丁,拌炒一下,淋上酱汁翻炒均匀

  5. step5

    5: 起锅前加花生、淋米酒及醋,再稍微拌炒约30秒没酸味即可起锅
