Sweet曼蒂~地瓜海鲜煎饼
材料
"地瓜丝 100g","透抽 100g","草虾仁 100g","韮菜 70g","葱 1支","中筋面粉 100g","太白粉 70g","水 180cc","杏仁角 少许","盐 5-8g","白胡椒 少许"
做法

1: 地瓜切细丝,韮菜和葱切末,透抽切条状,虾仁去肠泥,也可对切,虾仁和透抽先用热水川烫过

2: 杏仁角先用火稍为炒过备用,将中筋面粉和太白粉加水混合,并加入塩和白胡椒调味,搅拌均匀,约如图所示之稠状

3: 将所有食材加入面糊内混合,准备平底锅,加入一匙油热锅,并把面糊倒入锅内

4: 煎到面糊可在锅上滑动就可翻面,这时可撒上杏仁角,如果翻面有困难可用一个盘子倒扣,再滑入锅中再煎,这动作可重复三次左右,煎饼外层会比较酥脆,煎饼内口感会有点像蚵仔煎的感觉
