布列塔尼酥饼柠檬塔
材料
"柠檬汁(约34颗) 120cc","柠檬皮 3颗","砂糖 156g","奶油 190g","蛋 3颗","吉利丁 1.5片","奶油 125g","糖 55g","蛋黄 1个","杏仁粉 75g","泡打粉 1g","盐 2g","中筋面粉 110g","原味果冻 3颗",
做法

1:柠檬皮加糖搓揉,让糖具有香气,混合柠檬汁、蛋,小火隔水加热至50度时,慢慢搅拌至80度离火,放入泡冰水软化挤干的吉利丁片,搅拌至溶解。

2:等温度降到60度,一次放一小块奶油慢慢融化,再加下一块直到搅拌完毕,倒入模具冷藏约3小时取出放于架上。果冻微波溶解,放凉到手摸微温的状态,淋在柠檬塔上充当淋面,跟酥饼结合装饰,就完成啦!
