绝味爌肉
材料
"三层肉 约两条","盐巴 少许","姜 80g","葱 100g","蒜苗 2支","不辣辣椒 32g","八角 10g","花椒 10g","甘草片 35片","砂糖 100g","味霖 30g","酱油 600cc","香菇素蚝油 200cc","米酒 200g","香油 30g","香菜梗 少许","五香粉 2平匙","水 4000cc",
做法

1:三层肉表面洒些盐巴,下锅煎至表面上色(咖啡色)

2:姜、葱切断拍过、辣椒剖对半,起油锅先爆香姜、辣椒,后加入葱一同爆香

3:锅中空一处加入二砂炒至焦糖化,加入八角拌炒、后加入花椒、甘草片

4:加入米酒煮至酒精挥发

5:加入蠔油、酱油等剩余调味料,煮滚后加入煎好的三层肉,小火滚1小时半即可(想吃更软一点的肉可炖久一点)

6:切片完成!!
