皮Q肉香鲜肉馅汤圆
材料
"猪绞肉 500g","红葱头 100g","葱末 2支","姜泥 1大匙","酱油 1.5大匙","盐 1/4小匙","糖 1大匙","麻油 2大匙","白胡椒粉 1/2小匙","五香粉 1/4小匙","太白粉 2小匙","糯米粉 600g","沙拉油 1大匙","冷水 480cc",
做法

1:[内馅食材]

2:【内馅】1)红葱头切末用少许油炸酥。2)猪绞肉(细目绞2次)+红葱头酥、葱末、姜泥和内馅调味料搅拌至有黏性

3:将[糯米皮食材]混匀,用手慢慢搓揉成团状

4:先捏出100g的糯米团分两块,压扁后煮成"粿粹"(有添加"粿粹"的汤圆口感Q弹,而且生汤圆的外皮也较不容易开裂)

5:煮熟的"粿粹"稍凉后,就和生糯米团搓揉到光滑不黏手

6:将糯米团搓成长条,再以每一块约25g大小分切成小糯米团(约40颗)

7:小糯米团用大姆指捏成碗状,用右手虎口圈住汤圆皮的开口,以汤匙填入内馅后,收口捏紧搓圆即可。
