"米粉 1份","鸡肉 6两","香菇丁 半杯","嫩蚕豆 半杯","笋丁 半杯","火腿丁 半杯","韭黄 1杯","鸡蛋 2颗","酱油 1.5大匙","盐 1/4小匙","糖 1小匙","高汤 3汤匙","太白粉(玉米粉) 2小匙","酒 1小匙","盐 1小匙","玉米粉 2小匙"
做法

1:备料:蚕豆,火腿,蛋皮丁,鸡肉丁(醃渍),笋丁,香菇(泡软)去蒂头切丁,韭黄丁

2:热油,需高油温,米粉一遇高油温会立刻膨胀,两面煎酥后起锅

4:将米粉压碎成米粒大小

5:鸡肉丁炒松软

6:鸡皮煎出油后切丁(使用鸡胸肉则省略此步骤)

7:蚕豆,火腿,笋丁,香菇拌炒(蚕豆需软点,所有食材口感大致相同即可)

8:加入鸡丁与蛋皮丁,炒匀后加入综合调味料,拌匀即可起锅
