鱿鱼羹
材料
"干鱿鱼 1条(中型)","太白粉 6大匙","鱼浆 1斤","蒜头酥 1大匙","醋 1小匙","糖 1小匙","油面 半斤","白萝卜 半根","糖 适量","鸡粉 1小匙","蒜头酥 1大匙","高汤 3大碗公","地瓜粉水 1饭碗","鸡骨架 1个","姜 1小块","葱 2支","柴鱼 10g",
做法

1:干鱿鱼入泡了小苏打的温水中浸泡4小时

2:鱿鱼切成条状备用

3:鱼浆置于调理碗加入太白粉,糖,蒜头酥,醋

4:鱿鱼条拌匀静置半小时.

5:煮开一锅水转中小火,将鱼浆包住一条鱿鱼拨入热水中

6:煮至鱿鱼羹浮出水面即可捞出沥干,拌少许香油放凉.PA081017

7:鸡骨加入柴鱼葱姜注入水,熬煮高汤1小时,过滤备用

8:萝卜切小片入高汤煮开,加入蒜头酥,鸡粉,糖,用地瓜粉水芶芡放入鱿鱼羹块,略煮片刻即关火.

9:煮鱼浆的水再煮滚,入油面汆烫片刻 ,捞出置于大碗中

10:淋上鱿鱼羹,滴入乌醋,胡椒粉,摆上香菜上桌了!
