美味红烧鱼
材料
"海吴郭鱼 1尾","姜丝 适量","青葱 2根","青蒜 1根","红辣椒 1/2根","盐 少许","酱油 1.5大匙","酱油膏 1大匙","味霖 1大匙","米酒 3大匙","水 200cc",
做法

1:1.将海吴郭鱼洗净,姜切丝、青葱切段、青蒜斜切段、辣椒斜切片

2:2.用餐巾纸把海吴郭鱼表面的水分吸干

3:3.将鱼身表面斜划3刀(两面都要),并洒上少许的盐

4:4.热油锅,放入鱼煎至表面金黄(两面都要)

5:5.将鱼推到ㄧ侧,利用余油放入姜丝、葱白及蒜白炒香

6:6.倒入水、米酒、酱油、酱油膏及味醂煮滚中大火煮1分钟让酒精挥发,并同时用汤匙反复舀些汤汁淋在鱼身

7:7.盖上锅盖用小火闷煮至鱼熟(约4-5分钟左右)

8:8.将鱼先盛盘,开大火放入葱绿、蒜青及辣椒煮30秒熄火

9:9.将酱料淋在鱼身即可

10:10.香喷喷红烧鱼完成囉
