红烧镶肉豆腐
材料
"食材: 2","传统大豆腐 4块","绞肉 200g","馅料: 8","葱末 1大匙","绞肉 200g","姜末 1大匙","酱油 1大匙","糖 1小匙","香油 1/2小匙","胡椒粉 适量","太白粉 1小匙","调味料: 6","水 2杯","酱油 2大匙","糖 1大匙","葱花 20g","太白粉水 适量","香油 1小匙"
做法

1:姜和葱段轻拍一下,加半碗水,在碗里抓片刻成葱姜水

2:馅料分多次加入葱姜水搅拌至出筋(能摔打几下更好)

3:每块豆腐对切,在切面以小汤匙各挖一个凹槽

4:挖出的碎豆腐,加入馅料里拌匀

5:将肉馅填入豆腐凹槽里,留一些铺在豆腐面

6:起油锅,肉馅面朝下先煎,将两面都煎成金黄色

7:加2杯水、酱油、糖及1/2葱花到作法❻,盖上锅盖中火焖煮,水收至剩2/3后加入太白粉水勾薄芡,撒上香油及另1/2葱花即可。
