宫保鸡丁
材料
"鸡胸肉 400克","干辣椒 15克","花椒粒 少许","葱 1根","蒜味花生粒 少许","蒜末 1小匙","酱油 1大匙","糖 微量","太白粉 0.5大匙","酱油 1.5大匙","油膏 0.5大匙","梅林辣酱油 1大匙","糖 1/3大匙","米酒 1大匙","白醋 0.5大匙","乌醋 1/4大匙","水 3大匙",
做法

1:备料:鸡胸肉切大概厚度约0.8公分长2公分左右,先以醃料醃渍,要充分抓匀才会入味宫保汁也事先调好花椒粒.干辣椒.葱切段.蒜末.蒜味花生都准备好

2:锅内先下少许油热锅,以中火煎醃好的鸡胸肉至上色(这时鸡胸肉大概6-7分熟)捞起鸡胸肉沥油

3:擦干锅内的油,下一大匙油倒入花椒粒,以小火爆香花椒粒,锅内留下花椒油,取出花椒粒

4:接着以小火爆香葱白.干辣椒和蒜末,爆出有辣椒花椒的香气

5:序下煎好的鸡胸肉.宫保汁.葱段,以大火快速翻炒收汁

6:熄火撒入蒜味花生,装盘,就是又辣又麻超下饭的宫保鸡丁
