台式咸猪肉排骨煲仔饭
材料
"咸猪肉切片 1条","猪小排 200g","杏鲍菇切片 1根","小型干香菇 8朵","蒜头切末 2瓣","辣椒去籽切丝 1根","葱花 1根","姜末 1大匙","米 2杯","白胡椒粉 适量","盐 适量","水 2杯","油 适量","葱花 半根","酱油 5大匙","糖 1~2小匙","油 适量",
做法

1:猪小排以姜末、盐、白胡椒粉抓醃后静置30分钟备用

2:锅中加少许油爆香蒜末,加入米稍微拌炒,放入泡开的干香菇,加2杯水(用了泡干香菇的水,不够的部分才补水)盖上锅盖以中小火煮至锅缘冒蒸汽

3:开锅盖将杏鲍菇、咸猪肉、猪小排排在饭上,加盖转小火煮10-13分钟

4:开盖确认肉类是否都熟了,撒上葱花及辣椒丝,加盖煮1分钟后熄火闷5-10分钟

5:制作淋饭酱~起油锅爆香葱花,炒出香味后加入酱油及糖,以小火煮开后熄火即可
