团圆阖家欢-红烩素翅羹(粹酿年菜料理)

"中型大白菜 1颗","香菇丝 半碗","蛋皮丝 半碗","鱼板丝 半碗","火腿丝 半碗","干素翅 40克","干燥猪皮 2大块","蒜头酥 2匙","扁鱼 2匙","香菜 适量","粹酿香菇素蚝油 2匙","粹酿酱油露 4匙"," 适量","胡椒粉 少许","香油 少许","糖 1大匙","乌醋 1大匙","太白粉水 适量","年糕纸 1张"

做法

    1: 备妥食材

    2: 干燥素翅.干燥猪皮用清水泡软备用

    3: 起锅滚水入大白菜川烫至软再放入猪皮.续川烫备用.剩下的水再放入泡软的素翅.少许鸡粉煮5分钟起锅备用.

    4: 取一有深度的汤碗内先舖上年糕纸再摆上素翅深碗周围再铺排.香菇丝.火腿丝.蛋皮丝.鱼板丝.

    5: 将川烫好的白菜.猪皮.用味全粹酿酱油露2匙.扁鱼酥拌匀调味.

    6: 将白菜馅料填入舖好料的汤碗中.将白菜馅料压紧.入锅蒸30-40分.(蒸好后.汤汁滤出加入步骤8中)

    7: 取一深水盘盖住蒸好的馅料碗垫上厚布翻转倒扣在深水盘上.(此步骤请小心烫手)
