豆腐鲜虾粉丝煲

材料

"鸡蛋豆腐 1盒","鲜虾 12只","冬粉 1-2束","葱 2-3支","姜.蒜末 各1大匙","红辣椒 1支","豆瓣酱 1匙半","酱油 1大匙","红油.香油 各1/2匙","胡椒 1/2匙","糖 1小匙","水 1碗","肉末(可加可不加) 适量"

做法

  1. step1

    1: 鸡蛋豆腐切片,下锅煎至金黄,表面洒上一点点薄盐.备用

  2. step2

    2: 鲜虾洗净去肠泥,剪虾头(尖处或炼虾膏汤),下油锅翻炒加一点米酒去腥味,起锅备用.

    3: 爆香:葱白.蒜末.姜末.辣椒.(可加入肉末已起炒香)

  4. step4

    4: 爆香后接续:红油.香油.辣豆瓣酱.酱油.胡椒粉.糖.水.盐

  5. step5

    5: 再加入:泡软过的冬粉丝,翻炒及加入虾子.豆腐一起吸取汤汁,盛盘.

  6. step6

    6: 完成后盛入可保温的砂锅中.

    7: 砂锅可保温

    8: 装饰:洒上葱花淋上香油,完成"鲜虾豆腐煲".
